i play dominate game(a multiplayer online risk game, my name it NFOSS)alot

and i've noticed a few strategies that pop up alot. One is that it is

almost imposiible to have north and south america not fight and it is

relatively easy to not have europe and africa fight. Why is this?

You are quite right, most of the battles are around choke points. I think these are:
- Central America
- Middle East
- Iceland
- Kamchatka
- China
- North Africa

If you can control even half of these successfully and consistently they you are most probably on your way to winning.

The reason people like south America so much is because you don't increase the number of borders you have. For the Europe/Africa combo, you have SOO many borders, and it is REALLY hard to defend.

Perhaps you need to take Africa and Europe to take advantage of this and see what happens.  I plan to try this soon to test out your theory.  Choke points do matter a lot, and the Middle East is in my mind one of the most vital in the game, but it tends to affect Asia and Europe or Asia and Africa the most.  Africa and Europe share so many border countries that they do not often become the starting locations for most players but North and South America are.  Perhaps most games settle down to this equilibruim and thus either Africa or Europe is essentially "vacant" (meaning they do not contain significant forces or any one color) so they tend to fight less, where as North and South America are almost always occupied by dominant forces, brining the inevitable clash.
